Bitters have a long history of use as digestive aids, medicines, vitality tonics, and in more recent history - as cocktail enhancers. The bitter flavor of roots, barks, and herbs used in these preparations have a unique ability to tie flavors together, enhance some, and mute others. Our tongues have a limited ability to discern flavor profiles but can taste more different kinds of bitter than anything else. The rest of taste relies heavily on our sense of smell.
