Create your own coffee and pine liqueur. A perfect addition to your ice cream or favorite dessert - vanilla bean scoops on bread pudding; chocolate rocky road; double fudge brownies; cranberry coffee cake... the possibilities are endless!
Coffee and Pine Ice Cream Topping
1/4 cup ground coffee
3 cups filtered water
1 1/2 cups white rum
1 cup sugar
1 tsp vanilla extract
2 oz. White Pine Bitters
1. Combine 2 cups of water with the ground coffee in an air-tight container (preferably glass). Seal the container, shake, and let sit for 12-24 hours. Then, strain and discard the grounds.
2. In a pot, bring the remaining 1 cup of water and sugar to a boil. Boil and stir until the contents starts to thicken. Then remove from heat and allow to cool to room temperature.
3. Now combine the coffee extract with the cooled syrup, rum, vanilla extract, and White Pine Bitters in an air-tight glass container. Let sit for 2-3 days.
4. After the waiting period you will have a delicious coffee and pine liqueur perfect for use as an ice cream topping or your favorite dessert! Enjoy!
